Pick A Card, Any Card

How many times should you shuffle a pack of cards? How do casinos (try to) ensure that their cards are well shuffled? Why should we care? And what has this to do with mathematics?
In this talk I'll try to give an idea of how these questions can be answered, and why the answers are interesting, using a heady concoction of probability, group theory, combinatorics, analysis, and maybe even a little magic.
